The dog days of summer are nearly over, so it’s time to soak up the last of it with that barbecue you’ve been putting off! This bank holiday weekend is the perfect excuse. Whether you’re hosting a barbecue, or just attending one (or even if you just want to have something extra tasty for your dinner tonight), this all-purpose BBQ spice rub recipe is guaranteed to wow. It’s full of flavour, from smoky paprika to spicy chilli, it’s peppery and powerful and all round epic.
Feel free to adjust the recipe to suit your tastes, by altering the ratio of the ingredients – or just stick with the suggestion below, for a balanced and varied flavour.

All-purpose spice rub recipe
What you’ll need
- 5 parts paprika
- 1/2 part chilli
- 3 parts mixed peppercorns
- 1 part garlic powder
- 1 part cayenne pepper
- 5 parts salt
- 5 parts brown sugar
What to do
Grind the peppercorns in a pestle and mortar or an electric grinder, then combine with all of the other ingredients in a bowl. Stir until all components are well mixed, then transfer the spice rub into an air-tight container. Store it in a cool, dry place.
Rub a generous pinch of your homemade spice rub onto chicken breast, beef steaks or burgers, then cook in the normal way. You could also stir a pinch into a pasta sauce for an extra kick of flavour, or sprinkle it over a salad, even blend it into a soup. Easy to make, versatile AND delicious… what are you waiting for?!
